  • 5 to 6 small pickling cucumbers, sliced into spears or rounds
  • 5 cloves Mad River Garlic, smashed or sliced
  • 2 c cold water
  • 1 c white vinegar
  • 1 tbsp sea salt
  • 1 tbsp sugar
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • 1/2 tsp red pepper flakes (optional)
  • 3 to 4 sprigs fresh dill

Instructions


1. Prep the Cucumbers

Wash the cucumbers well and slice them into spears or rounds depending on your preference.

2. Build the Jar

Pack the cucumbers into a mason jar or airtight container. Add the garlic cloves, dill, peppercorns, mustard seeds, and optional red pepper flakes.

3. Make the Brine

In a bowl or saucepan, combine the water, vinegar, sea salt, and sugar. Stir until the salt and sugar fully dissolve.

4. Pour and Chill

Pour the brine over the cucumbers until fully covered.

Seal the jar and refrigerate for at least 24 hrs before serving. For even more flavor, let the pickles sit for 2 to 3 days.
