Garlic isn’t just for planting — it’s for cooking, savoring, and sharing. As the leaves turn and the air cools, here are a few Mad River favorites to fill your kitchen with the aroma of fall:


Roasted Garlic & Butternut Squash Soup

Creamy, sweet, and savory.

Cut 1 butternut squash in half, brush with olive oil, and roast with 2 heads of garlic (cut tops off) at 400°F for 40 minutes. Scoop out the squash and squeeze roasted garlic into a blender with 3 cups veggie broth, ½ cup cream, and salt & pepper to taste. Blend smooth and top with a swirl of olive oil.

 

Garlic-Herb Mashed Potatoes

Comfort food at its finest.

 

\Boil 3 lbs of Yukon golds until tender. Mash with 1 stick butter, ½ cup milk, 4 cloves roasted garlic, and a handful of chopped parsley. Add salt and pepper — and extra butter if your heart says yes.

Whisk together 2 tbsp olive oil, 1 tbsp honey, and 3 minced garlic cloves. Toss with 1 lb carrots and roast at 425°F for 20 minutes, stirring once.

Simmer peeled garlic cloves (about 2 heads) in olive oil over low heat for 40 minutes until golden and soft. Spread the cloves on warm toast and sprinkle with sea salt. Save the oil for future recipes — it’s liquid gold.
