Fresh Garlic Scapes

Garlic scapes are the flower stalk of hardneck garlic plants. We remove them from the plant to encourage larger bulb development, and what comes off the plant is one of the most anticipated seasonal delicacies of the garlic-growing year.

Scapes have a mild, fresh garlic flavor with a crisp texture often described as a cross between asparagus and green beans. They are incredibly versatile and can be:

• Grilled
• Sautéed
• Stir-fried
• Added to soups and omelets
• Chopped into salads
• Dehydrated for seasoning
• Mixed with salt for garlic scape salt
• Made into the famous garlic scape pesto

Fresh garlic scapes are only available for a short time each year, making them a true seasonal treat. Enjoy them while they’re in season!
