A stunning deep-purple fingerling potato prized by chefs and home gardeners alike. Purple Peruvian produces small, elongated tubers with dark purple skin and flesh that stays purple when cooked. Nutty, earthy flavor — excellent roasted, pan-fried, or in salads. Mid- to late-season.

Purple Peruvian Fingerling is a striking heirloom fingerling potato with rich purple skin and matching purple flesh from skin to center. Color holds beautifully after cooking, making it a favorite for gourmet plating, farmers markets, and specialty dishes.

Tubers are slender and elongated with firm, waxy flesh and a nutty, earthy flavor. They excel in high-heat roasting, pan-frying, potato salads, and sheet-pan vegetables.

Purple Peruvian is moderately productive and loves warm, sunny locations and well-drained soil. Expect a longer season but amazing color and flavor payoff.

📍 Where Purple Peruvian Fingerling Grows Best

Performs well in:

  • full sun
  • loose, well-drained sandy loam or loam
  • slightly acidic soils (pH 5.0–6.5)

Does best in:

  • warmer growing regions than many russets
  • raised beds or containers with good drainage
  • areas with consistent moisture but not waterlogged soil

Less suited to heavy clay unless amended or grown in raised beds.

🌱 When to Plant

Plant when soil temperatures reach 45–50°F and danger of deep frost is past.

  • Northern climates: spring, around last frost time
  • Mild climates: early spring
  • Warm climates: late winter to early spring

Planting guidelines:

  • Plant whole small fingerlings or cut seed pieces with 1–2 eyes
  • Depth: 3–4 inches
  • Spacing: 8–10 inches apart
  • Rows: 24–30 inches apart

Hilling protects tubers from sun-greening and boosts yields.
